What exactly IS Bottled in Bond? The Bottled in Bond Act of 1897 was enacted in order to help guarantee the spirit’s authenticity and level of quality. For the discerning whisky drinker who craves more transparency and wishes to be guaranteed the highest quality, the Bottled in Bond spirits that are starting to make a resurgence should come as a delight.
To be labeled as Bottled in Bond, a spirit must be aged and bottled according to a special set of regulations from the U.S. Government that includes:
- Be the product of one distillation season by one distillery (George Dickel Bottled in Bond has been distilled by Cascade Hollow Distilling Co. at Cascade Hollow Distillery, DSP-TN-2, during the fall season of 2005)
- Be stored in oak containers a federally bonded warehouse under U.S. government supervision (George Dickel Bottled in Bond was stored at Cascade Hollow Distillery in Tullahoma, TN) for at least four years (13 years old)
- Be bottled at 100 proof (50% ABV) and reduced in proof only by the addition of water to not less than 100 proof
At 100 proof (50% ABV), George Dickel’s Bottled in Bond offers a bold and balanced profile highlighted by tastes of light honey, tropical fruit, warm spices, and a touch of leather. This batch comes from barrels that were maturing since Fall 2005, and while the 13-year-old whisky makes its debut at Cascade Hollow Distilling Co. today, May 17th, and rolling out to shelves nationwide later this month.
Already George Dickel Bottled in Bond has won awards. It took home Gold at the San Francisco World Spirits Competition and racked up a score of 95 (on a scale of 100), earning the designation of “Best Buy” from Wine Enthusiast Magazine.
This versatile, award-winning, limited edition whisky can be enjoyed neat or on the rocks, in addition to being well-suited for a variety of cocktails. George Dickel’s ongoing commitment to making unique, smooth, high quality whisky available at a great value continues with the release of George Dickel Bottled in Bond with Nicole Austin at the helm of operations as General Manager and Distiller. It marks her first innovation since joining the company in 2018. Austin, along with her dedicated staff, take great pride in maintaining the traditions and standards set by George Dickel himself and continue to look ahead creating different innovations to compete in today’s market appealing to whisky lovers across the U.S..
“We wanted George Dickel Bottled in Bond to be rooted in authenticity, quality and truth, reflective of the values we feel are most important when making Tennessee’s finest whisky,” said Austin. “The aged whisky stocks we have access to here at Cascade Hollow are absolutely beautiful, and it’s important to me that we create whisky that’s sure to be a great value for the quality you’re getting.”
Corn, rye, and malted barley grains are blended together and milled to create Bottled in Bond with a mash bill of 84% corn, 8% rye, and 8% malted barley. Followed by a mashing process for 3-4 hours adding enzymes throughout this process. Afterwards, a fermentation process lasting 3-4 days with an 8th generation custom yeast for George Dickel’s use only. It is then charcoal mellowed, like the rest of the George Dickel Tennessee Whisky products, which helps it get that smooth mouthfeel for which the brand is best known for. George Dickel himself once said that winter is the best time to create his whisky for a smoother taste, so temperatures are kept during the process typically between 40-46 degrees to uphold the standards set so long ago by its original creator. Finally, the whiskey is stored in large white oak barrels in warehouses on the property to age appropriately as they are carefully tended to ensuring the highest of standards are held throughout the entire process.
Back in 1870, George Dickel worked diligently to achieve his life-long dream for crafting the smoothest Tennessee Whisky he could right on the very same land tucked far back off the beaten path in Tullahoma, Tennessee that the Cascade Hollow Distilling Co. sits today.
Since then, operations have continued to expand as the demand for George Dickel Whisky continues to grow in popularity. The vast acreage that Cascade Hollow Distilling Co. sits on today holds a visitor center and bottle shop along with the distillery plant that you see next to the cascading streams that run throughout the area. Although built on the original land, it is not the original distillery that its creator operated in. This newer facility was built in the late 1950’s.
That tradition set forth by the original creator and namesake, continues over a century later, as the staff guided by Nicole Austin at Cascade Hollow Distilling Co. painstakingly hold to the rich traditions in whisky-making set forth by George Dickel himself so many years ago.
